Poppy Seed Dressing with Salad Greens

Olive oil has a lot of flavor, especially extra virgin oil, but at a price. Canola, peanut or plain vegetable oil makes a lighter and tasty base for this salad dressing, and will cost a fraction of what olive oil costs.

Ingredients

Serves 4 

  • 1 shallot
  • 1/4 cup honey
  • 3 tablespoons cider vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 2 teaspoons poppy seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • SALAD:
  • 6 cups green leaf lettuce
  • 1 (11-ounce) can mandarin oranges
  • 1 apple, chopped
Directions
  1. 1

    Mince shallot. Place in a medium bowl. Add honey, vinegar, olive oil, mustard, poppy seeds, salt and pepper. Whisk until very well mixed.

    For the salad, tear greens into bite-size pieces. Place in a large bowl.

    Drain oranges; add to greens in bowl. Add apple.

    Pour dressing over salad. Toss well.
