Mexican Pizza

Play up the Mexican theme and stretch your grocery dollars, too: purchase a package of small flour tortillas to use instead of the prepared pizza crusts. Then make up to 10 individual pizzas with 10 tortillas.

Ingredients

Serves 6 

  • 1 (16-ounce) can refried beans
  • 1 (4-ounce) can chopped green chiles
  • 1 cup sour cream
  • 2 (12-inch) prepared pizza crusts
  • 2 tomatoes, deseeded, chopped
  • 1/2 cup chopped green onions
  • 1/4 cup sliced black olives
  • 3 cups shredded Mexican cheese blend or Monterey Jack cheese
Directions

    Preheat oven to 400°F. Combine refried beans, green chiles and sour cream in a small bowl; mix well.

    Spoon half the bean mixture evenly over each pizza crust.

    Sprinkle tomatoes, green onions and olives over bean mixture.

    Divide the cheese evenly between pizzas. Bake until cheese is melted, about 10 minutes.
