Creamy Seafood Casserole

20 minutes“Sometimes scallops are too expensive or difficult to find. So to save some money and still have a satisfying seafood casserole, use imitation crabmeat or extra shrimp in place of the scallops.”
Ingredients
Serves 6
- 6 ounces bacon, chopped
- 1 1/2 pounds shrimp, peeled, deveined
- 1 large onion, chopped
- 1 tablespoon chopped garlic (about 5 medium cloves)
- 1 pound scallops
- 1 (10-ounce) can cream of mushroom soup
- 1 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions

Cook bacon in a large skillet over medium heat until partially cooked, about 5 minutes. Drain, reserving 1 tablespoon pan drippings. Combine bacon and shrimp in a medium bowl.

Preheat oven to 400°F. Grease a medium baking dish. Add onion to skillet; cook, stirring, until tender, about 5 minutes. Add garlic and scallops; cook, stirring constantly, for 1 minute.

Add soup, bacon and shrimp to skillet; stir well. Spoon shrimp mixture into prepared baking dish.

Bake until casserole is bubbly, about 20 minutes. Stir in sour cream, salt and pepper.
