South Seas Shrimp Kebabs

If shrimp are not on sale or too pricey, you can use chicken instead for a satisfying supper. Purchase 1 1/2 pounds skinless, boneless chicken. Cut the meat into 1-inch cubes for perfect kebabs.

Ingredients

Serves 4 

  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons curry powder
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 3 tablespoons vegetable oil, divided
  • 1 1/2 pounds shrimp, peeled, deveined
Directions

    Combine soy sauce, honey, garlic, curry powder, lime juice, brown sugar and 1 tablespoon oil in a large bowl. Whisk until brown sugar is dissolved.

    Add shrimp to bowl; stir well to coat. Cover; chill for about 20 minutes.

    Meanwhile, soak several wooden skewers in a shallow dish of water for 20 minutes. Preheat grill.

    Thread shrimp onto skewers. Grill, turning and brushing with marinade and remaining oil, until shrimp are browned, about 5 minutes on each side.
