Chicken Ranch Nachos
Prep time:

Ingredients
Serves 6
- 4 tablespoons butter or margarine
- 1/2 pound chicken tenders, cubed
- 1/2 teaspoon salt
- 1 (16-ounce) bag tortilla chips
- 1 (16-ounce) bottle ranch dressing
- 8 ounces shredded Monterey Jack cheese
- 1 (3.8-ounce) can sliced black olives, drained
- 1 medium tomato, diced
- 1/4 cup chopped green onions
- 1/4 cup pickled jalapeño slices (optional)
Directions
1
Heat butter in a large skillet over medium-high heat. Add chicken and salt. Cook, stirring occasionally, until chicken is cooked through, about 10 minutes. Drain on paper towels.
2
Preheat oven to 400°F. Layer chips on an ovenproof platter. Layer chicken over chips. Spoon the dressing over chicken.
3
Sprinkle cheese, then olives, tomato, green onions and jalapeños over the chicken layer.

You can save money by using olive oil and balsamic vinegar instead of the bottled Italian vinaigrette dressing called for in the recipe. Use 1 part vinegar to 3 parts oil for the best flavor.
