Crisp Cucumber Rounds

none“You can cut your cost by purchasing a king sandwich size loaf of bread. Cut 3 rounds from each slice of bread. Use the leftover bread scraps to make a great bread pudding.”
Ingredients
Serves 64
- 2 medium cucumbers
- 12 ounces cream cheese, softened
- 4 green onions, finely chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 loaf soft white bread (about 32 slices)
Directions

Peel cucumbers and cut lengthwise into quarters. Remove seeds. Chop cucumbers very finely.

Place chopped cucumbers in a large kitchen towel and wring to remove all the liquid.

Combine cream cheese, cucumbers, green onions, salt and pepper in a medium bowl; mix well.

Cut 2 rounds from each slice of bread with a small round cookie cutter (11/2-inch or less). Spread with cucumber mixture. Serve immediately.

Another quick way to deseed cucumbers is to slice them into halves lengthwise and use a pointed spoon to scoop out the seeds.
