Mandarin Chicken Salad

Ingredients
Serves 4
- 3/4 cup vegetable oil, divided
- 8 won ton wrappers (31/4 x 31/4 inches), cut into 11/2- x 3/8-inch strips
- 1 can (11 oz.) mandarin oranges, undrained
- 3 tbsp. seasoned rice vinegar
- 1 tbsp. sesame oil
- 1/2 tsp. salt
- 8 cups torn romaine lettuce
- 2 cups cooked, cubed chicken
- 1 cup chopped celery
- 1/4 cup toasted slivered almonds

Heat 1/4 cup vegetable oil in a small skillet until hot. Add the won ton strips. Cook, turning once, until lightly browned, about 30 seconds. Remove from the oil and drain on paper towels. Set aside.

Drain the oranges, reserving 2 tbsp. juice. Set the oranges aside. Combine the vinegar, juice from the oranges, the remaining vegetable oil,the sesame oil and salt in a jar with a tight-fitting lid. Shake well.

Combine the lettuce, chicken, celery, almonds and oranges in a large salad bowl. Toss to mix. Add the dressing to the salad and mix well.

Divide the salad evenly among 4 salad plates.Sprinkle each with 2 tbsp.won ton strips and serve.
