Pineapple Teriyaki Chicken

Ingredients
Serves 4
- 1 tbsp. vegetable oil
- 4 bone-in, skin-on chicken breast halves (about 8 oz. each)
- 1/2 tsp. salt
- 1/2 cup ketchup
- 1/4 cup pineapple preserves
- 1/4 cup bottled teriyaki marinade
- 1 tbsp. firmly packed light brown sugar
- 1 can (8 oz.) pineapple tidbits in juice

Heat the oil in a large nonstick skillet over medium heat. Sprinkle the chicken evenly with the salt. Add the chicken to the skillet. Cook until golden brown on both sides and the juices run clear when cut in the thickest part, 15–20 minutes. Transfer the chicken to a plate. Cover loosely with aluminum foil to keep warm.

Add the ketchup, preserves, marinade and brown sugar to the skillet. Bring to a boil, stirring to combine. Stir in the pineapple tidbits, including juice.

Return the chicken to the skillet. Cook until sauce thickens, about 1 minute. Place 1 chicken breast half on each of 4 plates. Spoon one-fourth of the sauce over each serving.
