Cheddar Mashed Potatoes

Ingredients
Serves 4
- 13/4 lb. russet potatoes, peeled and cut into chunks
- 4 tbsp. butter
- 1/3 cup hot milk
- 13/4 cups grated white Cheddar cheese
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 large tomato, sliced
- 1 tbsp. snipped fresh chives

Place the potatoes in a large saucepan with enough lightly salted water to cover. Bring to a boil, then reduce heat and simmer until tender when tested with a knife, 10–12 minutes. Drain.

Return the potatoes to the pot. Set the pot over low heat until the potatoes dry out a bit, about 2 minutes. Remove the pot from heat and mash in the butter. Pour in the milk and mash again until smooth. Stir in half of the cheese. Season with the salt and pepper.

Preheat broiler to high. Grease a shallow baking dish. Spoon the potato mixture into the prepared dish, and sprinkle with the remaining cheese. Arrange the tomato slices on top. Broil 5 inches from heat until the cheese is melted, 3–4 minutes. Sprinkle with the chives. Serve hot.
