Mozzarella Mashed Potatoes

Ingredients
Serves 6
- 5 large russet potatoes, peeled and quartered
- 5 cloves garlic, peeled
- 3 tbsp. butter
- 1/3 cup heavy whipping cream
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 11/2 cups shredded mozzarella cheese, divided
- 1 tbsp. chopped fresh parsley

Preheat oven to 350°F. Place the potatoes and garlic in a large pot of lightly salted water. Bring to a boil over medium-high heat. Cook until the potatoes are tender when pierced with a fork, 20–25 minutes. Remove from heat and drain.

Return the potatoes and garlic to the pot. Mash the potatoes, garlic, butter, cream, salt, pepper and 1 cup mozzarella with a potato masher until there are no lumps.

Spoon the mixture into a2-quart baking dish. Sprinkle with the remaining cheese. Bake until the cheese is melted, 5-10 minutes. Sprinkle with the parsley.
