Smashed Red Potatoes

20 minutes“Smashed or mashed, red potatoes are delicious with lots of whipping cream, butter and fresh chives—and no peeling necessary!”
Ingredients
Serves 6
- 21/2 lb. small red potatoes, scrubbed
- 1/2 cup whipping cream
- 1/4 cup (1/2 stick) butter, melted
- 1/4 cup snipped fresh chives
- 3/4 tsp. salt
- 1/2 tsp. black pepper

Cut the potatoes into 2-inch pieces. Place the potatoes in a large saucepan and add enough water to cover. Bring to a boil over medium-high heat. Reduce heat to medium-low. Simmer until the potatoes are slightly tender when pierced with a fork, 20–25 minutes. Drain.

Place the potatoes in alarge bowl. Mash witha potato masher untilcoarsely mashed.

Stir the cream, butter, 3 tbsp. chives, the salt and pepper into the potatoes. Spoon into a serving bowl. Top with remaining chives and serve.
