Smashed Red Potatoes

Smashed or mashed, red potatoes are delicious with lots of whipping cream, butter and fresh chives—and no peeling necessary!

Smashed or mashed, red potatoes are delicious with lots of whipping cream, butter and fresh chives—and no peeling necessary!

Ingredients

Serves 6 

  • 21/2 lb. small red potatoes, scrubbed
  • 1/2 cup whipping cream
  • 1/4 cup (1/2 stick) butter, melted
  • 1/4 cup snipped fresh chives
  • 3/4 tsp. salt
  • 1/2 tsp. black pepper
Directions

    Cut the potatoes into 2-inch pieces. Place the potatoes in a large saucepan and add enough water to cover. Bring to a boil over medium-high heat. Reduce heat to medium-low. Simmer until the potatoes are slightly tender when pierced with a fork, 20–25 minutes. Drain.

    Place the potatoes in alarge bowl. Mash witha potato masher untilcoarsely mashed.

    Stir the cream, butter, 3 tbsp. chives, the salt and pepper into the potatoes. Spoon into a serving bowl. Top with remaining chives and serve.
