Boston Baked Corn

Ingredients
Serves 6
- 4 slices bacon
- 2 (15 1/2-ounce) cans whole kernel corn
- 3/4 cup firmly packed light brown sugar
- 3/4 cup ketchup
- 1 small onion, chopped
- 1/2 medium green bell pepper, chopped
- 1/2 teaspoon dry mustard
- 1/2 teaspoon garlic salt
- 1/4 teaspoon black pepper

Preheat oven to 350ºF. Grease a 1 1/2-quart baking dish.

Chop the bacon and place in a medium skillet. Cook over medium-high heat, stirring frequently, until slightly browned but not crisp, about 3 minutes. Drain.

Drain corn. Place in a large bowl.

Add brown sugar, ketchup, bacon, onion, bell pepper, dry mustard, garlic salt and black pepper to corn and mix well.

Spoon corn mixture into the prepared baking dish. Bake until hot and bubbly, about 1 hour.

Grandma's Secret Trick
Because some of her family liked both Boston baked beans and this corn recipe so much, Grandma eventually began using a can of corn and a drained can of baked beans, rather than two cans of corn, as a variation on this recipe.
