Broccoli with Pine Nuts

Broccoli with Pine Nuts

Ingredients

  • 1 large bunch broccoli (about 1 pound)
  • 1 dried red chile pepper
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/2 cup pine nuts
  • 1/2 cup raisins
  • 2 large tomatoes, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Directions

    Cut the broccoli into florets. Trim and peel broccoli stems; cut into thin slices. Remove and discard stem and seeds from red chile pepper. Crush chile pepper to crumble. Crush garlic in a garlic press; remove and discard skins.

    Heat olive oil in a large skillet over medium-high heat. Sauté chile pepper and garlic in the hot oil for 2 minutes. Add pine nuts and raisins. Sauté just until pine nuts begin to brown, about 3 minutes.

    Add broccoli to pine nut mixture. Sauté for 5 minutes. Stir in the tomatoes.

    Cook, stirring frequently, until heated through, about 1 minute. Add salt and black pepper and mix well. Let stand to cool to room temperature, about 2 minutes. Spoon into a serving dish.

Grandma's Secret Trick

With good canned tomatoes, Grandma could make this dish all year long. She just rinsed the tomatoes, cut them in half, removed the seeds and chopped the tomatoes. As a bonus, canned tomatoes were already peeled.
