Caramelized Onions

Ingredients

Serves 4 

  • 2 medium onions
  • 3 tablespoons olive oil or butter
  • 1 teaspoon granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dry mustard
Directions
  1. 1

    Cut the onions into very thin wedges using a sharp knife or a vegetable slicer.

    Heat olive oil in a small skillet over medium heat.

  3. 3

    Add the onions and granulated sugar to the hot olive oil in the skillet. Toss to coat onions well with the olive oil.

    Cook the onions, stirring occasionally, until caramelized, about 25 to 30 minutes.

    Add lemon juice, thyme and dry mustard to onions and mix well. Serve hot.

Grandma's Secret Trick

Caramelized onions add so much flavor to so many foods that Grandma often made large batches using 3 or more onions. She used them for topping mashed potatoes and roast beef, stirred them into scrambled eggs and quiche mixtures, spooned them over cheese ravioli and spread them over pizzas. The onions would keep, covered, in the refrigerator for a week.
