Crumb-Topped Snowball

We thought this cauliflower dish looked like a snowball, so that's what Grandma called it.

Ingredients

Serves 6 

  • 1 large head cauliflower (about 1 1/4 pounds)
  • 4 tablespoons butter
  • 1 cup fresh bread crumbs
  • 2 medium green onions, thinly sliced
  • 2 large eggs, hard cooked, finely chopped
  • 2 tablespoons lemon juice
Directions

    Remove and discard leaves and stem from cauliflower. Cut around core with a paring knife, being careful not to separate florets from head; remove and discard core. Rinse.

    Pour 1 inch of water into large saucepan. Place cauliflower in water, stem side down; cover. Bring to a boil over high heat; reduce heat to low. Simmer cauliflower until crisp-tender, about 10 to 12 minutes; drain. Place cauliflower in 8-inch square baking dish.

    Preheat oven to 375°F. Melt butter over medium heat in small skillet. Stir in bread crumbs and onions; cook until crumbs are browned. Stir in eggs and lemon juice.

    Press the crumb mixture evenly over top of the cauliflower. Place any extra crumb mixture in baking dish. Bake until the crumb mixture is crispy and lightly browned, about 10 minutes.

Grandma's Secret Trick

Only a perfect, snowy white head of cauliflower would do when Grandma was making this dish for company. She looked for tightly packed, crisp florets and bright green leaves, too. Sometimes Grandma served her cauliflower snowball topped with a creamy Cheddar cheese sauce, a light sprinkling of paprika and chopped fresh parsley, along with cooked baby carrots circling its base.
