Golden Rice Pilaf

Ingredients

Serves 6 

  • 2 tablespoons butter
  • 1/2 cup shredded carrots
  • 1 cup apple juice
  • 1 cup water
  • 1 cup long-grain rice
  • 1/2 cup golden raisins
  • 1 tablespoon light brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped cashews
Directions
  1. 1

    Melt butter in a medium saucepan over medium-high heat. Sauté carrots in the hot butter until crisp-tender, about 5 minutes.

    Add apple juice, water, rice, raisins, brown sugar, salt, curry powder, cinnamon and ginger to the carrot mixture and mix well. Bring to a boil. Reduce heat to low.

    Simmer mixture, covered, until the rice is tender and the liquid is absorbed, 20 to 30 minutes. Stir in the cashews. Serve immediately.

Grandma's Secret Trick

Grandma used to double this Golden Rice Pilaf recipe and set aside half for breakfast the next day. Next morning, she reheated it on the stove and added a little milk and some light brown sugar. Talk about good!
