Grandma's Special Beans

Ingredients
Serves 4
- 1 (20-ounce) bag frozen cut green beans
- 1/2 (3-ounce) jar roasted red pepper strips, drained, slivered
- 1/8 teaspoon salt
- 1/8 teaspoon white pepper
- 4 ounces cream cheese
- 1/2 cup milk
- 3/4 cup blue cheese (3 ounces), crumbled
- 1/2 cup seasoned bread crumbs
- 1 tablespoon butter, melted
- Red and yellow bell peppers and fresh parsley, optional for garnish
Directions

Preheat oven to 350°F. Lightly grease 2-quart oval baking dish with nonstick cooking spray.

Combine green beans, red pepper strips, salt and white pepper in prepared baking dish.

Place cream cheese and milk in small saucepan; heat over low heat, stirring until cream cheese is melted.

Add blue cheese; stir just until combined. Pour cheese mixture over green bean mixture and stir until green beans are coated.

Combine bread crumbs and butter in small bowl; sprinkle evenly over casserole.

Bake, uncovered, until hot and bubbly, 20 minutes. Garnish with red and yellow bell peppers and fresh parsley, if desired.

Grandma's Secret Trick
One great advantage of frozen green beans is that they're already cooked. When Grandma made this casserole, she simply spooned the still-frozen green beans and other ingredients into a dish and put it in the oven to heat it through. What a time-saver!
