Green Bean Bundles

Ingredients

Serves 5 

  • 1 pound fresh whole green beans
  • 3 to 4 slices bacon, cut into thirds
  • 1/3 cup firmly packed light brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Directions

    Preheat the oven to 325ºF.

    Combine green beans and enough water to cover in a large saucepan. Bring to a boil. Boil for 3 minutes; drain.

    Wrap 5 or 6 green beans with a piece of bacon and secure with a toothpick. Repeat procedure with the remaining green beans and bacon.

    Arrange bundles in a 13 × 9-inch baking dish. Sprinkle with brown sugar, salt and black pepper.

    Bake bundles until bacon is crisp, about 15 to 20 minutes.

Grandma's Secret Trick

If Grandma did not have fresh green beans on hand, she used canned green beans instead. She simply drained 2 (141/2-ounce) cans green beans, rinsed them and drained again. To give them a fresh taste, she tossed the green beans with a tablespoon of lemon juice before proceeding with the recipe.
