Grandma used frozen whole green beans for this recipe once in awhile. She'd just thaw them and skip the first step. They tasted just as good to us!

Ingredients

Serves 6

  • 2 cups water
  • 1 1/2 pounds green beans, stem ends removed
  • 1/3 cup cider vinegar
  • 3/4 cup sliced green onions,
  • 2/3 olive oil
  • 3 tablespoons chopped parsley
  • 3 tablespoons chopped fresh dill or 2 teaspoons dried dill
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon salt
Directions
  1. 1

Bring water to a boil in a large saucepan over high heat. Add beans. Cook, covered, until crisp-tender, about 5 minutes. Drain. Cover with cold water.

  2. 2

Meanwhile, pour vinegar and green onions into a blender container. With motor running, add oil in a thin stream. Process whole mixture for 1 minute.

  3. 3

Combine parsley, dill and walnuts with oil mixture in a medium bowl and mix well.

  4. 4

Spoon dill sauce over beans in a large bowl. Stir well. Add salt and mix well.

Grandma's Secret Trick

Snipping fresh dill with scissors instead of chopping with a knife will yield a fresher looking herb that is not crushed and save on clean up time.
