Grilled Vegetable Salad

Vegetables are grilled to slightly charred perfection and tossed with a light dressing, tangy feta cheese and basil for a truly memorable salad.

Ingredients

Serves 6 

  • 1 small eggplant
  • 1 medium zucchini
  • 2 medium yellow squash
  • 1 large red bell pepper
  • 1 large red onion
  • 4 ounces fresh asparagus
  • 5 tablespoons olive oil, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons lemon zest
  • 1/2 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon granulated sugar
  • 2 cups torn basil leaves
  • 3/4 cup crumbled feta cheese
  • 1 1/2 cups croutons
Directions

    Preheat the grill to high.

    Cut the eggplant, zucchini and yellow squash into 1/2-inch slices. Seed and quarter the bell pepper. Peel and quarter the red onion. Trim about 2 inches off the end of each asparagus. Combine the vegetables with 2 tablespoons olive oil, salt and pepper in a large bowl; toss to coat.

    Grill the vegetables 2–3 minutes per side, until tender and slightly charred. Remove from the grill to cool slightly.

    For the dressing, whisk together the remaining olive oil, lemon zest, lemon juice, garlic and sugar in a medium bowl until well blended.

    Cut the vegetables into bite-size pieces and add to a large serving bowl with the dressing, basil, feta cheese and croutons; toss to coat.

Variation

Make grilled vegetable bruschetta. Dice the grilled vegetables into small pieces; toss with dressing. Slice a baguette into thin rounds & grill. Spread each toast with hummus & top with grilled vegetable salad.

Healthy Hint

Instead of the dressing, toss the salad with fresh lemon juice & freshly ground pepper. Use organic vegetables, which are more nutritious, free of chemical pesticides & not genetically modified.
