Herb-Crusted Tomatoes

Ingredients

Serves 4 

  • 4 to 6 small tomatoes
  • 1/4 cup seasoned bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 1/2 tablespoons butter, melted
  • 1 tablespoon chopped fresh basil
Directions

    Preheat the broiler to 500ºF.

    Rinse the tomatoes and pat dry. Cut off and discard tops of the tomatoes. Arrange the tomatoes in an 11 × 7-inch baking dish.

    Combine bread crumbs, Parmesan and butter in a small bowl and mix well.

    Spoon equal portions of bread crumb mixture evenly on top of each tomato.

    Broil tomatoes 8 inches from heat until lightly browned, about 7 to 8 minutes. Sprinkle with basil.

Grandma's Secret Trick

In high summer, Grandma's "slicer" tomatoes could be very watery. So before topping and broiling them, Grandma squeezed each cut tomato to remove some of the wet seeds and pulp. Otherwise, the liquid could cause the bread crumb topping to be damp instead of crisp.
