Low Country Grits and Ham Bake

Ingredients
Serves 6
- 1 quart milk
- 1 1/2 cups shredded Gruyère cheese
- 1 stick butter or margarine, divided
- 1 cup uncooked regular grits
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup chopped cooked ham
- 1/3 cup grated Parmesan cheese
Directions

Preheat oven to 350°F. Grease an 8-inch square baking dish. Bring milk to a boil in a large saucepan over medium-high heat, stirring often.

Add Gruyère and 4 tablespoons butter to saucepan. Stir until cheese is melted. Slowly pour in grits. Cook, stirring constantly with a fork or whisk, until mixture is thick, about 5 minutes.

Stir salt and pepper into saucepan. Reduce heat to low. Beat mixture with an electric mixer set at medium speed until fluffy and very well blended, about 5 minutes. Stir in ham.

Pour mixture into prepared dish. Melt remaining butter in a small saucepan. Add Parmesan; stir well. Spread over grits mixture. Bake until set, about 30 minutes.

Grits are usually found with the hot cereals at the supermarket. Store the open package of grits in a sealed container in the refrigerator. The regular or old- fashioned grits have a better texture and flavor than the quick-cooking variety.
