Sautéed Cherry Tomatoes

Ingredients

Serves 6 

  • 3 tablespoons butter
  • 3 tablespoons extra virgin olive oil
  • 4 tablespoons dry sherry or chicken broth
  • 1 1/2 teaspoons dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon hot pepper sauce
  • 2 pints cherry tomatoes
  • 1/4 cup grated Parmesan cheese
Directions

    Melt butter in a large skillet over medium heat. Stir in olive oil.

    Add sherry, basil, thyme, salt, garlic, black pepper and hot pepper sauce to hot butter mixture and mix well.

    Add tomatoes to sherry mixture, stirring to coat.

    Sauté the mixture, stirring continually, for 5 minutes.

    Transfer tomato mixture to a serving dish. Sprinkle with Parmesan. Serve hot.

Grandma's Secret Trick

Sautéed Cherry Tomatoes were Grandma's favorite accompaniment to roasted pork. She said the tart acidity of the tomatoes was a good contrast to the rich meat. Sometimes she used grape tomatoes as a substitution for the cherry tomatoes.
