Vegetable Goulash

Ingredients

Serves 8 

  • 4 small zucchini, thinly sliced
  • 4 medium onions, coarsely chopped
  • 2 large green bell peppers, coarsely chopped
  • 2 (28-ounce) cans diced tomatoes
  • 1/4 cup granulated sugar
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic salt
  • 1/4 teaspoon black pepper
  • 3/4 cup seasoned bread crumbs
  • 1 cup grated Parmesan cheese
Directions
  1. 1

    Combine zucchini, onions and bell peppers in a large skillet. Sauté over medium-high heat, stirring continually, until tender, about 5 minutes.

    Combine tomatoes, granulated sugar, oregano, garlic salt and black pepper in a large saucepan and mix well.

    Bring tomato mixture to a boil over medium-high heat, stirring occasionally.

    Add zucchini mixture and bread crumbs to tomato mixture and mix well.

    Cook mixture, stirring occasionally, for 5 minutes. Remove from heat. Stir in Parmesan. Serve hot.

Grandma's Secret Tip

Grandma's Dutch oven was so handy for making this recipe. She used it to sauté the zucchini, onions and bell peppers, then added the tomatoes, sugar and spices directly to the zucchini mixture. That way, she had only a single pot to wash.
