Zucchini Parmesan Bake

Ingredients
Serves 6
- 1 tablespoon plus 1 teaspoon butter, divided
- 4 cups sliced zucchini
- 1 cup freshly grated Parmesan cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 2 large eggs, beaten
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup bread crumbs

Preheat oven to 350°F. Butter a 1 1⁄2-quart baking dish.

Melt 1 tablespoon butter in a large skillet over medium-high heat. Sauté zucchini in butter in skillet just until tender, about 3 to 4 minutes. Drain well.

Combine Parmesan, mayonnaise, sour cream, onion, bell pepper, eggs, salt and black pepper in a large bowl. Add the zucchini and toss lightly to mix. Spoon mixture into prepared baking dish.

Mix bread crumbs and the remaining butter in a small bowl. Sprinkle over zucchini mixture. Bake until lightly browned, about 30 minutes.

Variation: Try adding 1 1⁄2 cups chopped, seeded fresh tomatoes plus 1⁄4 cup bread crumbs to the zucchini mixture.

Grandma's Secret Tip
Grandma sometimes turned this dish into a hot dip for bread or fresh vegetables. She shredded the zucchini instead of slicing it and grated the onion instead of chopping it. Then she proceeded as the recipe directed, omitting the green bell pepper, eggs and bread crumb topping.
