Hot Fudge Sauce

During Grandma's nap time, I'd tiptoe to the kitchen to eat fudge sauce right from the jar.

During Grandma's nap time, I'd tiptoe to the kitchen to eat fudge sauce right from the jar.

Ingredients

 

  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 5 ounces half-and-half
  • 1/3 cup light corn syrup
  • 5 1/3 tablespoons butter
  • 1 teaspoon vanilla extract
Directions

    Combine granulated sugar and cocoa in a small saucepan and mix well.

    Add half-and-half and corn syrup to granulated sugar mixture and mix well. Bring to a boil over medium-low heat, stirring continually.

    Boil the mixture, stirring continually, for 1 minute. Remove from heat. Stir in butter and vanilla extract.

    Pour into 2 hot, sterilized 1/2-pint jars, leaving 1/2-inch headspace. Seal with 2-piece lids. Process in a hot water bath for 5 minutes. Makes 2 (1/2-pint) jars.

As a holiday gift, nothing was more welcome than Grandma's Hot Fudge Sauce. After years of giving fudge sauce, Grandma looked for ways to vary the flavor from year to year in order to surprise her friends. For a Creole taste, she substituted brown sugar for half of the granulated sugar and used 1 tablespoon rum instead of the vanilla extract.
