Sweet Onion Marmalade

Ingredients
- 2 pounds Vidalia or Bermuda onions
- 1/4 cup olive oil
- 2 tablespoons granulated sugar
- 1/2 teaspoon each white pepper and black pepper
- 1/8 teaspoon each ground allspice and ground cloves
- 1/4 cup each red-wine vinegar chicken broth
- 1 teaspoon salt

Cut onions in half lengthwise, then into 1/2-inch wedges.

Heat olive oil in a large skillet over medium heat. Add the onions. Cook, stirring frequently, until tender, about 15 minutes.

Add granulated sugar, white pepper, black pepper, allspice and cloves and mix well.

Cook the mixture, stirring frequently, for 10 minutes. Stir in the vinegar. Cook, stirring occasionally, for 5 minutes. Stir in broth and salt.

Spoon into 2 hot, sterilized 1-pint jars, leaving 1/4-inch headspace. Seal with 2-piece lids. Process in a hot water bath for 10 minutes. Makes 2 (1-pint) jars.
