Bacon-Wrapped Scallops

Ingredients

Serves 4 

  • 2 tablespoons sherry or pineapple juice
  • 1/2 teaspoon granulated sugar
  • 16 large sea scallops
  • 1/2 teaspoon salt
  • 8 water chestnuts, cut in half
  • 4 green onion stems, cut into 1-inch pieces
  • 8 slices bacon, cut in half

    Combine sherry and granulated sugar in a medium bowl and mix well. Add the scallops. Let stand for 30 minutes.

    Preheat the broiler to 500ºF.

    Remove scallops from the marinade with a slotted spoon. Sprinkle scallops with the salt.

    Place a scallop, water chestnut half and green onion piece on each slice of bacon.

    Fold bacon to enclose filling. Secure with a toothpick. Arrange on a broiler pan. Broil until the bacon is browned and scallops are opaque, about 10 to 12 minutes. Serve immediately.

Grandma's Secret Trick

Sometimes Grandma made double the amount of appetizers without doubling the amount of sea scallops used. Since the scallops most commonly available were large sea scallops, she cut them in half horizontally to form two thinner disks. Then she proceeded with the recipe as directed.
