My sister and I liked helping in the kitchen during parties because we could sneak an appetizer hot from the oven.

Ingredients

Serves 20 

  • 1 pound ground beef
  • 1 pound pork sausage meat
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 pound processed cheese, cubed
  • 1 (4-ounce) can mushrooms, drained, chopped
  • 1 1/2 teaspoons oregano
  • 2 loaves party rye bread
Directions

    Combine ground beef, sausage, onion and bell pepper in a large skillet. Cook over medium heat, stirring frequently, until meat is browned and crumbly, about 10 minutes; drain.

    Add cheese and mushrooms to the ground beef mixture. Stir in oregano. Reduce heat to low.

    Cook the mixture, stirring continually, until cheese is melted, about 3 to 5 minutes.

    Preheat the broiler. Lightly grease baking sheets.

    Spread the ground beef mixture on the bread slices. Arrange on prepared baking sheets. Broil the appetizers 4 inches from the heat until browned, about 3 to 4 minutes.

Cubing processed cheese is simpler if you use one of Grandma's tricks. Sometimes she placed the cheese in the freezer for about an hour to firm it so that it would cut more cleanly. Other times she cubed the cheese with a knife that she dipped in hot water (and wiped clean) between cuts.
