Cornmeal Cheese Wafers

Ingredients
Serves 12
- 1/2 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 1/2 cups shredded sharp Cheddar cheese
- 8 tablespoons (1 stick) butter, finely chopped
- 1/3 cup yellow cornmeal
- 2 tablespoons water
- 1 teaspoon prepared yellow mustard with horseradish
Directions

Combine all-purpose flour, whole-wheat flour, salt and cayenne pepper in a large bowl and mix well. Stir in cornmeal, Cheddar and butter.

Combine water and mustard in a small bowl and mix well. Add to flour mixture. Mix with hands to form a dough. Chill, covered, for 1 hour.

Preheat the oven to 350ºF. Lightly grease baking sheets.

Divide dough into 3 equal portions. Roll each portion 1/8 inch thick on a floured surface. Cut with a 2-inch cutter. Arrange on prepared baking sheets.

Bake until lightly browned, about 10 minutes. Remove to wire racks to cool. Store in airtight containers.

Grandma's Secret Trick
This recipe was one Grandma used over and over, because the dough can be made in advance and kept in the refrigerator for up to 3 days before being baked. She wrapped the dough tightly in plastic wrap. When she was ready to bake, she rolled and cut it as the recipe directs.
