Pastry Olive Bundles

Ingredients

Serves 6 

  • 1 1/2 cups grated Gouda cheese
  • 3/4 cup all-purpose flour
  • 4 tablespoons butter, softened
  • 3 slices bacon, crisp-cooked, crumbled
  • 1/8 teaspoon black pepper
  • 21 large pimiento-stuffed green Spanish olives
Directions

    Preheat the oven to 375ºF. Spray a baking sheet with nonstick cooking spray or line with parchment paper.

    Combine Gouda, flour, butter, bacon and black pepper in a medium bowl and mix well, adding a small amount of water to dough if crumbly.

    Wrap 1 heaping teaspoonful of dough around each olive. Arrange olives on prepared baking sheet.

    Bake until lightly browned, about 20 to 25 minutes. Serve immediately or cool to room temperature.

Grandma's Secret Trick

To ensure that the pastry wrapping was not saturated with oil from the olives, Grandma had a simple solution. She patted the olives completely dry with a paper towel or clean kitchen towel so that there was no liquid in them to seep through.
