Peach-Mango Salsa

Ingredients
Serves 16
- 4 medium peaches
- 1 medium mango
- 1 medium red bell pepper
- 1 jalapeño pepper
- 4 medium green onions
- 2 tablespoons olive oil
- 1 teaspoon grated lime zest
- 2 tablespoons lime juice
- 2 tablespoons red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bag (about 12 ounces) corn tortilla chips
Directions

Cut the peaches in half and remove the pits. Peel and chop the peaches Deseed, peel and chop the mango. Deseed and chop the bell pepper. Deseed and chop the jalapeño pepper. Chop the green onions.

Place the peaches, mango, bell pepper and jalapeño pepper in a medium bowl. Stir in the onions, oil, lime zest, lime juice, vinegar, salt and black pepper. Mix well.

Cover and chill until the flavors are blended, about 30 minutes. Serve the salsa with the tortilla chips.

Here’s an easy way to deseed and chop a jalapeño chile pepper: First, put on
plastic gloves! Then slice off the stem end of the chile. Slice it in half lengthwise, then scrape out the seeds and white membrane from each half with a turned-over teaspoon. Chop the deseeded jalapeño halves and you’re ready to go.
