Sparkling Party Punch

Orange juice, lemon-lime soda and champagne create a colorful, festive punch. A decorative ice ring adds the perfect finishing touch.

Orange juice, lemon-lime soda and champagne create a colorful, festive punch. A decorative ice ring adds the perfect finishing touch.

Ingredients

Serves 18 

  • Fresh raspberries, edible flowers and/or fresh mint
  • 1 can (12-ounce) frozen orange juice concentrate, thawed
  • 2 tbsp. sugar
  • 1 bottle (1 liter) lemon-lime soda, chilled (4 cups)
  • 1 bottle (750 ml.) extra-dry champagne or 3 cups ginger ale, chilled
  • 11/2 cups fresh raspberries, chilled
Directions

    At least 1 day before serving the punch, fill a ring mold or a tube pan one-third full of water. Freeze until solid. Arrange the raspberries, edible flowers and/or the mint over the ice. Slowly pour additional water over the top, being careful not to disturb the decorations. Freeze until solid.

    On serving day, combine the orange juice concentrate and sugar in a punch bowl or very large clear-glass serving bowl. Stir in 1 cup water.

    Slowly pour the soda and champagne into the bowl. Add the chilled raspberries and the ice ring. Serve.

To ensure a crystal-clear ice ring, use distilled water only. Boil the distilled water (either on the stove top or in the microwave) and let it cool before filling the mold.
