Sweet & Spicy Wings

Ingredients

  • 3 pounds chicken wings
  • 3/4 cup salsa
  • 2/3 cup honey
  • 1/3 cup soy sauce
  • 1/4 cup Dijon-style mustard
  • 2 tablespoons vegetable oil
  • 1 tablespoon grated fresh gingerroot
  • 1/2 teaspoon each grated lemon zest and grated orange zest

Directions

    Cut off and discard wing tips from chicken. Cut each wing in half at joint. Place wings in 13 x 9-inch baking dish; set aside.

    Combine salsa, honey, soy sauce, mustard, vegetable oil, gingerroot, lemon zest and orange zest in small bowl; mix well.

    Pour salsa mixture over chicken wings; stir to combine. Cover dish with plastic wrap. Marinate wings in refrigerator at least 6 hours or overnight.

    Preheat the oven to 400F. Place chicken wings in single layer on foil-lined, 15 x 10-inch jelly-roll pan. Pour salsa mixture evenly over chicken wings.

    Place chicken wings in oven. Bake until chicken wings are golden brown, about 40 to 45 minutes. Serve warm.

    Variation: For spicier chicken wings, add a few drops of hot pepper sauce to the salsa.

Grandma made dried lemon or orange peel by removing the peel from the fruit, chopping it finely, and drying the peel in a single layer overnight at room temperature. She kept the dried lemon or orange peel in an airtight container in the refrigerator.
