Blackberry Cake

Ingredients

Serves 18 

  • 1 1/4 cups granulated sugar
  • 8 tablespoons (1 stick) butter
  • 2 large eggs
  • 1 cup buttermilk
  • 1 1/4 teaspoons baking soda
  • 1 cup mashed blackberries
  • 1 1/4 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 cups all-purpose flour
Directions

    Preheat the oven to 425ºF.

    Combine granulated sugar and butter in a large bowl. Beat with an electric mixer until light and fluffy. Beat in the eggs.

    Combine buttermilk and baking soda in a small bowl and stir to dissolve baking soda.

    Add blackberries, buttermilk mixture, cinnamon and cloves to sugar mixture and mix well. Add the flour and mix well.

    Spoon mixture into a 12 × 8-inch baking pan. Bake until cake starts to pull from the sides of the pan, about 17 to 20 minutes; do not overbake.

A potato masher worked best for mashing blackberries, according to Grandma. She poured about 11/4 cups blackberrries into a bowl, then crushed them with a potato masher to get the berries just the right texture for this cake.
