Dutch Shoofly Pie

Ingredients

Serves 8 

  • 6 large eggs, beaten
  • 3/4 cup light molasses
  • 1/4 cup hot water
  • 1 (9-inch) unbaked pie shell
  • 1/2 cup graham cracker crumbs
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 4 tablespoons butter
Directions

    Preheat the oven to 375ºF.

    Combine beaten eggs, molasses and hot water in a medium bowl and mix well. Spoon into pie shell.

    Combine graham cracker crumbs, flour, cinnamon, nutmeg and ginger in a medium bowl and mix well. Cut in butter until mixture is crumbly.

    Sprinkle the crumb mixture evenly over the egg mixture.

    Bake until lightly browned, about 10 minutes. Reduce oven temperature to 325ºF. Bake until set, about 20 to 25 minutes. Transfer to a wire rack to cool slightly. Serve warm or at room temperature.
