Frozen Mud Pie

"Ice cream, cookies, coffee, and fudge sauce in a pie: What's not to like?" asked my Uncle Mike.

"Ice cream, cookies, coffee, and fudge sauce in a pie: What's not to like?" asked my Uncle Mike.

Ingredients

Serves 6 

  • 1 pint chocolate ice cream, softened
  • 1 tablespoon cold coffee
  • 1 tablespoon coffee liqueur
  • 1 cup whipped topping
  • 1 (9-inch) chocolate cookie crumb piecrust
  • 1/2 cup fudge topping
  • 8 maraschino cherries
Directions

    Combine ice cream, coffee and liqueur in a large bowl. Stir thoroughly but quickly.

    Add whipped topping to bowl. Stir gently. Spoon mixture into piecrust. Place in freezer for 30 minutes.

    Heat fudge topping in the microwave or in a small saucepan until hot and pourable. Drizzle topping generously over pie.

    Cut cherries into halves. Arrange in a decorative pattern over pie. Freeze pie until serving time.
