Green Shamrock Cupcakes

Ingredients
Serves 12
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/3 cup milk
- 1/4 cup (1/2 stick) butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 to 6 drops green food coloring
- 1 can (16 ounces) vanilla icing
- 1/4 cup green decorator sugar

Preheat the oven to 350F. Line 12 muffin cups with paper baking liners.

Combine the flour, sugar, milk, butter, eggs, baking powder and salt in a large bowl. Beat with an electric mixer on low speed until moistened. To tint the batter green, add food coloring, 1 drop at a time, until desired color is reached. Increase the mixer speed to medium; beat 2 minutes.

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Bake the cupcakes until the tops are golden and a toothpick inserted in the centers comes out clean, 16 to 20 minutes. Cool in the pan on a wire rack for 5 minutes. Remove the cupcakes from the pans; place on wire rack to cool completely.

Spread frosting on the cooled cupcakes. Place a 1-inch shamrock-shaped cookie cutter on one cupcake. Sprinkle green sugar inside the cutter; remove cutter. Repeat with remaining cupcakes.

Grandma's Secret Tip
Grandma sometimes used this recipe to make a shamrock sheet cake. She would pour the batter into a greased 13 x 9-inch baking pan and bake at 350F for about 30 minutes. Then we would help frost and decorate the cake with green-sugar shamrocks.
