New Orleans Chocolate Pie

Ingredients
Serves 6
- 1 1/2 cups chocolate wafer crumbs (about 27 wafers)
- 8 tablespoons (1 stick) butter, softened, divided
- 2 cups semisweet chocolate chips
- 3/4 cup firmly packed light brown sugar
- 1 tablespoon milk
- 2 teaspoons instant coffee granules
- 2 teaspoons rum flavoring
- 3 large eggs
- 1/4 cup all-purpose flour
- 1 cup chopped walnuts

Preheat the oven to 375°F.

Combine chocolate wafer crumbs and 4 tablespoons butter in a medium bowl and mix well. Press into the bottom and sides of a 9-inch pie plate.

Melt chocolate chips and remaining butter in a medium saucepan over low heat. Remove from heat.

Add brown sugar, milk, coffee granules and rum flavoring to chocolate mixture and mix well.

Stir eggs and flour into the chocolate mixture. Fold in the walnuts. Spoon into pie shell.

Bake until pie is set, about 20 minutes. Cool on a wire rack for 30 minutes before serving. Serve with ice cream, if desired.

Grandma's Secret Trick
Brown sugar is what gives this pie its fudgy richness, and coffee and rum flavoring add a touch of New Orleans. For an even deeper flavor, Grandma used dark brown sugar. Sometimes she also used vanilla extract instead of rum flavoring. Either way she had a super-rich and flavorful pie.
