Party Gumdrop Cupcakes

Ingredients

Serves 30 

  • 2 cups granulated sugar
  • 1 1/2 cups (3 sticks) butter, softened, divided
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon water
  • 2 cups applesauce
  • 1 teaspoon vanilla extract
  • 4 cups gumdrops, divided
  • 1 (16-ounce) package confectioners' sugar
  • 3 to 4 tablespoons whipping cream
  • Food coloring, optional
Directions

    Preheat the oven to 350ºF. Line 30 muffin cups with paper liners.

    Combine granulated sugar and 1 cup butter in a large bowl. Beat with an electric mixer set at medium speed until light and fluffy. Add eggs one at a time, beating well after each addition.

    Combine flour and salt in a small bowl and mix well.

    Dissolve baking soda in water in a small bowl. Stir in the applesauce.

    Add flour mixture alternately with baking soda mixture to the butter mixture, beating well after each addition. Add vanilla and mix well. Stir in 21/2 cups gumdrops.

    Fill muffin cups three-fourths full with batter. Bake until a toothpick inserted in cupcakes comes out clean, about 25 minutes.

    Beat remaining butter, confectioners' sugar, whipping cream and food coloring in a small bowl until creamy. Spread on cupcakes. Sprinkle with the remaining gumdrops.

Grandma's Secret Trick

Grandma found these cupcakes were easier for small children to eat if she used miniature gumdrops in the batter and used the large gumdrops for decoration. She used 3 cups of miniature gumdrops or snipped large gumdrops in half with a pair of kitchen shears to equal 3 cups.
