Grandma's Secret Trick
Grandma found that the quickest way to grate lime zest was to use the small holes of the grater. She pressed the lime to the grater and ran the lime over the holes once, then turned the lime to an ungrated portion of the peel and ran it over the holes again. This way, she got only the tasty, colored part of the peel. She repeated the process until she had the amount of lime zest she needed.
When Grandma served this flourless rolled cake at Christmas, she would decorate the table with evergreen boughs and pinecones!
Grandma said it’s called ‘devil’s food’ because the baking soda reacts with the cocoa to give the cake a devilishly red color.
