Stained Glass Christmas Cake

Ingredients

Serves 12 

  • 1 package (18 1/4 ounces) white cake mix
  • 3 large eggs
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 can (16 ounces) plus 1 cup vanilla frosting
  • 1 cup dark chocolate frosting
  • 2 tubes red decorating gel
  • 2 tubes green decorating gel
  • 1 tube yellow decorating gel
  • 1 tube blue decorating gel
Directions

    Preheat oven to 350F. Grease and flour two 8-inch round cake pans. Combine cake mix, eggs, milk and oil; pour batter into prepared pans. Bake cakes until a toothpick inserted in center comes out clean, 30 to 35 minutes. Transfer pans to wire racks; cool for 10 minutes. Turn cakes onto racks; cool completely.

    Place a wire rack on a baking sheet. Using a large knife, trim tops of cakes to make level. Transfer one cake to the rack. Spread with 3/4 cup vanilla frosting. Top with remaining layer. Spread 1 1/2 cups vanilla frosting on sides.

    Place remaining vanilla frosting in a glass measuring cup. Microwave on HIGH for 10 seconds; stir. Continue heating at 10-second intervals until frosting is thick and creamy. Pour frosting over entire cake starting from center; using a spatula, spread to cover cake sides. Let stand until frosting is dry, about 30 minutes.

    Draw a tree on a piece of parchment paper and cut out to create a template. Place the template on top of the cake. Using a toothpick, trace the template onto the frosting. Spoon chocolate frosting into a resealable plastic bag; snip off one corner. Pipe along traced lines. Pipe more lines to make tree decorations and then stained glass shapes.

    Pipe different colored gels within lines, then, using a paint brush, distribute gel evenly.
