Star Berry Cake

Ingredients
Serves 8
- 1 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/4 cups sugar
- 1/2 cup (1 stick) butter, softened
- 2 large eggs
- 1 large egg white
- 1 tablespoon grated lemon zest
- 3/4 cup lemon juice
- 1/2 cup milk
- 1/2 cup sour cream
- 3 tablespoons raspberry jam
- 2 cups blueberries
- 2 cups raspberries
Directions

Preheat the oven to 350F. Grease a 10-inch round cake pan with butter or nonstick spray. In a medium bowl, sift together the flour and baking powder.

Beat the sugar and butter in a large bowl with an electric mixer on medium speed until light and fluffy. Beat in the eggs and egg white. Add the lemon zest, juice, milk and sour cream and beat until blended and smooth. Reduce the speed to low and beat in the flour mixture until just blended. Pour the batter into the prepared pan and smooth the top.

Bake the cake until golden brown and a toothpick inserted near the center comes out clean, about 55 minutes. Transfer the pan to a wire rack to cool slightly. Carefully turn the cake out onto the rack and cool completely.

Brush the top of the cake with the jam to keep the berries in place. Arrange the blueberries in a star pattern on the top of the cake. Arrange the raspberries around the blueberries.
