Apple Quesadillas

Grandma often called these "the lazy woman's dumplings." Made with store-bought tortillas instead of pastry dough, they taste like dumplings but are so much easier!

Ingredients

Serves 6 

  • 2 large Granny Smith apples, thinly sliced
  • 1 tablespoon cinnamon sugar
  • 1 teaspoon lemon juice
  • 7 tablespoons butter, divided
  • 6 (6-inch) flour tortillas
  • 7 tablespoons butter, divided
  • Vanilla ice cream and caramel topping for serving
Directions
  1. 1

    Combine the apples, cinnamon sugar and lemon juice in a medium bowl and toss to coat.

    Melt 1 tablespoon butter in a medium saucepan over medium heat. Sauté the apple mixture in the hot butter, stirring continually, until the apples are tender, about 5 minutes. Remove from the heat.

    Spoon equal portions of the apple mixture onto each tortilla, then fold in half to enclose the filling.

    Melt 1 tablespoon butter in a large skillet over medium heat. Cook 1 quesadilla in the hot butter, carefully turning once, until golden, about 2 minutes per side. Remove to a dessert plate. Repeat with the remaining butter and quesadillas.

    Top each serving with a scoop of vanilla ice cream. Drizzle with caramel topping. Serve immediately.

Grandma's Secret Tip

When Grandma was really in a hurry, she used one 21-ounce can of apple pie filling instead of cooking the apples in Step 1. She just warmed the filling before spooning it onto the tortillas.

Apple turnovers are eaten for breakfast, so why not these? Omit the ice cream & topping & drizzle with cream instead, if desired.

For a quicker dessert, use a can of apple pie filling in place of the apples, cinnamon sugar, lemon juice &1 tablespoon butter. A little filling may leak as you cook them, but the time savings will compensate!
