Caramel Dumplings

Ingredients
Serves 6
- 2 cups granulated sugar, divided
- 2/3 cup all purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons butter, divided
- 1/4 cup plus 1 tablespoon milk
- 2 1/2 cups hot water
- 1 teaspoon vanilla extract

Preheat the oven to 375ºF.

Combine 1⁄2 cup granulated sugar, flour, baking powder and salt in a large bowl and mix well. Cut in 1 tablespoon butter with a pastry blender. Add milk and mix well to form a dough.

Place 1⁄2 cup granulated sugar in a large cast-iron or ovenproof skillet. Cook over medium-high heat, stirring frequently, until browned, about 2 to 3 minutes. Stir in the hot water.

Add remaining 1 cup granulated sugar, remaining butter and the vanilla extract to the browned sugar mixture and mix well. Bring to a boil, stirring mixture frequently.

Drop the dough by tablespoonfuls into the browned sugar mixture in skillet. Bake until golden, about 15 to 20 minutes.

Our family's favorite way to eat these dumplings is to spoon a warm dumpling and some sauce over vanilla ice cream. Grandpa said that when he was little, his family served them in a bowl with a dollop of sour cream or a few spoonfuls of whipping cream.
