Caramel Popcorn Treats

2 minutes“These crunchy sticky caramel popcorn treats are great for a party. Grandma would wrap them up and give them out as favors! ”
Ingredients
Serves 16
- 1/4 cup (3/4 stick) butter
- 1/2 cup corn syrup
- 1 cup light brown sugar
- 1 teaspoon vanilla extract
- 5 cups popped popcorn
- 5 cups rice cereal
- 1/2 cup peanuts (optional)
Directions

Melt the butter in a large saucepan over medium-low heat. Add the corn syrup, brown sugar and vanilla. Stir continually, 2 minutes. Bring to a boil. Remove the pan from the heat.

Add the popcorn, cereal and peanuts, if desired, to the pan. Stir from the bottom up to evenly coat the ingredients.

Let cool 15 minutes, then form into small, 2-inch balls and lay on parchment or wax paper to cool completely.

If desired, give the treats out as a favor or gift. Wrap them in cellophane and tie with colorful ribbon.

If you don’t have time to form the balls, press the mixture into a buttered baking pan. Let cool & cut into squares.

Variation
For a fun party idea,make colored popcorn pops. Substitute ½ cup granulated sugar for the brown sugar in step 1 & heat until sugar dissolves. Stir in a small box of gelatin dessert (any color). Proceed with recipe. After forming balls, insert sticks.
