Cherry Berry Dessert

Ingredients

Serves 8 

  • 2 1/2 cups water, divided
  • 1 (3-ounce) box strawberry-flavored gelatin mix
  • 1 cup sliced fresh strawberries
  • 1 (3-ounce) box cherry-flavored gelatin mix
  • 1 (12-ounce) container frozen whipped topping, thawed
  • 1 (8.5-ounce) can fruit cocktail, drained
Directions

    In small saucepan, bring 2 cups water to a boil over high heat. Remove from heat.

    In medium bowl, combine boiling water with strawberry-flavored gelatin mix, stirring constantly, until gelatin dissolves.

    Pour strawberry gelatin mixture into 1-quart mold. Chill until partially set, about 11⁄2 hours. Fold strawberries into gelatin mixture. Chill until completely set, about 2 hours longer.

    In same saucepan, bring remaining water to a boil over high heat. Remove from heat.

    In a medium bowl, combine boiling water with cherry-flavored gelatin mix, stirring constantly, until gelatin dissolves. Fold in the whipped topping until well blended and smooth. Fold in fruit cocktail.

    Pour cherry gelatin mixture over the strawberry gelatin mixture in mold. Chill until completely set, about 4 hours. Carefully invert onto serving plate. Serve immediately.

grandma's secret

To keep the strawberries and fruit cocktail floating in the gelatin in this mold, Grandma would let the gelatin partially set before adding the fruit to it. Otherwise, if the gelatin had not set enough, the fruit would sink to the bottom.
