Chilled Lime Surprise

Ingredients
Serves 12
- 2 large eggs
- 6 egg whites
- 3 tablespoons butter
- 1 1/4 cups granulated sugar
- 1 tablespoon grated lime zest
- 3/4 cup fresh lime juice
- 8 ounces ladyfingers
Directions

Combine whole eggs and egg whites in a medium bowl; beat until foamy. Set aside.

Combine butter and sugar in top of a double boiler. Melt butter over simmering water. Stir in lime zest and lime juice.

Add egg mixture to butter mixture; cook and stir until thickened, about 6 minutes. Remove from heat and let cool completely.

Cut ladyfingers in half lengthwise. Line the bottom of a 1 1/2-quart soufflé dish with ladyfingers. Cover with about 1 cup lime mixture. Continue layering until all the ladyfingers are used. End with a layer of lime mixture.

Cover tightly with plastic wrap; store in refrigerator 6 hours or overnight. Garnish with very thin lime zest strips, if desired.

Grandma's Secret Trick
To extract the most juice from fresh limes or any citrus fruit, Grandma removed them from the refrigerator the night before so they would be room temperature. Then she rolled the limes firmly against the countertop with the palm of her hand before squeezing. Grandma knew that the rolling action ruptured the membranes of the limes, allowing more juice to be released.
