Chocolate Pots de Crème

At age seven, I had my first serving of pots de crème in Grandma’s real china cups.

Ingredients

Serves 6 

  • 2 (1-ounce) squares unsweetened chocolate
  • 3 cups warm milk
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 5 egg yolks, beaten
  • 1/2 teaspoon vanilla extract
  • Chocolate curls, optional for garnish
Directions

    Shave chocolate with a paring knife.

    Melt chocolate in a medium saucepan over low heat. Gradually stir in warm milk. Cook, stirring continually, until blended.

    Add granulated sugar and salt to chocolate mixture. Cook, stirring continually, until sugar is dissolved. Remove from heat. Add egg yolks gradually, stirring continually.

    Cook the mixture over very low heat, stirring continually, until pudding thickens, about 12 minutes.

    Remove mixture from heat. Stir in vanilla extract. Spoon into 6 custard cups. Chill, covered, until set, about 2 hours. Garnish with chocolate curls, if desired.

Grandma's Secret Trick

A serving of Chocolate Pots de Crème is very rich, but at about 1/2 cup per serving, it looks small. Grandma served it in delicate china custard cups that held just the right amount. But if the occasion wasn't special enough for china, she spooned the mixture into wine glasses, parfait glasses or punch cups. And for the younger children, she spooned each serving into a disposable paper cup.
