Chocolate Soufflé

Ingredients
Serves 4
- 1/2 cup plus 1 tablespoon granulated sugar, divided
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup whole milk
- 2 squares (2 ounces) unsweetened chocolate, melted
- 1 teaspoon vanilla extract
- 4 large eggs, separated
- 1/8 teaspoon salt
- 2 teaspoons confectioners' sugar
Directions

Preheat oven to 350°F. Grease a 1-quart round soufflé dish or deep baking dish with a straight side. Dust with 1 tablespoon granulated sugar.

Melt the butter in a small saucepan over medium heat. Stir in the flour. Cook for about 1 minute. Add the milk. Cook, stirring constantly, until thickened, 1–2 minutes. Remove from heat. Stir in the remaining granulated sugar, the chocolate and vanilla. Cool slightly. Beat the egg yolks in a small bowl. Stir into the chocolate mixture.

Place the egg whites and salt in a large bowl. Beat with an electric mixer set on high speed until stiff peaks form but the mixture is still glossy. Transfer about 1 cup egg whites to the chocolate mixture. Stir well.
